Brief intro!

Hello All!
I don't know how you landed on by blog but I'm glad you're here now! So I guess I'm gonna introduce myself; I am Diana, living currently in Canada but originally from a tiny island named Mauritius. What made me create this blog is definitely my passion for baking; I just loooooove baking French pastries (and of course eat them). I had the chance to take some baking/cooking lessons and came to learn different types of techniques to make your favorite cake/pastry/desert successful. So I would like to share my passion with you. M auritian Goodies: Napolitaine What is Napolitaine? Napolitaine is a very popular pastry biscuit in Mauritius . It is basically 2 shortcrust pastry biscuits sandwiched together with strawberry jam in the middle and then glazed with an icing.  I still remember long time ago I used to go to the nearby shop to buy some napolitaine and I would enjoy it while watching movies and sipping my tea *good memories*. Below is the recipe of this fabulous biscuit. I would highly recommend you to bake it if you never tasted it. Rolled Chocolate Love Cake with White Chocolate Ganache and Strawberries.

Hi people It's been quite a long time since I haven't updated my blog. I guess you will all agree when you work full time and live on your own, you don't really have much time left. Anyways, I decided to bake a rolled cake I wanted to try since last year and the result was better than expected! This rolled chocolate cake is very simple to make, requires only 10 ingredients and is a crowd-pleaser. So, why don't you give it a try?! For the white chocolate ganache, you will need: -1 1/2 cup white chocolate -1 cup heavy/whipping cream -1 cup quartered strawberries For the pattern: - 1 large egg white -30 g granulated sugar -40 g plain flour -20 g room temperature unsalted butter - Red food coloring For the cake: -4 eggs, white and yolk separated -1/2 cup sugar -60 g melted butter -1/2 cup flour -1/4 cup cocoa powder Utensils required: Baking pan (11'' x 17''), Parchment paper (not wax paper), Piping bag with smallest nozzle

As we all know, Cheesecake is basically a layered cake, where the bottom layer is either made of graham crackers, digestive biscuits or even cookies, pastry or sponge cake ( I should try to make it with soaked boudoirs, like a Tiramisu-style cheesecake). On top of the base comes the cream cheese, flavored and gently mixed with heavy whipped cream and finally on top, you commonly have fruits, whipped cream, nuts, jelly and so on.  There are two different types of Cheesecake - baked ones or no-bake cheesecake.  The way of preparing a baked Cheesecake is almost exactly the same as a no bake one.
